Italian Vegetable Medley
Ingredients:
- 1 clove garlic, minced 
- 1 onion, sliced 
- 2 teaspoons olive oil 
- 3 cups combined red, yellow, or green bell peppers, sliced 
- 2 zucchini, sliced (about 2 cups) 
- salt to taste 
- 1 teaspoon thyme, oregano or basil, or a combination of all 
- Directions: 
 In a large skillet, saute garlic and onion in olive oil.
- Add a splash of water and cook vegetables until tender. Stir in peppers, zucchini, salt, and herbs. 
- Cover and cook until tender. 
Makes 8 servings.
